It was pretty easy and not bad, but not great either. I will try it again with some additional spices and maybe some veggies added in before baking.
2 medium onions, chopped
2 cloves garlic, finely chopped
Oil or vegetable stock to saute
2 cups dried TVP granules, not rehydrated
2 cups hot vegetable stock (can use a cube)
2 cups fresh wholemeal breadcrumbs
2 tablespoons nutritional yeast flakes (or more to taste)
2 tablespoons wholemeal flour
1/4 cup tomato ketchup or tomato sauce
1/2 teaspoon each of dried thyme, rosemary, and sage, crumbled in your fingers
Finely chopped fresh parsley to taste (optional)
Saute the onions and garlic until soft. Mix all the other ingredients together; and when the onion and garlic are done, mix those in too. Leave the mixture to set for 5 minutes (the dried TVP will absorb the liquid).
Either pack mixture into an oiled loaf tin (fits well into a 1 pound), or form into a mound on a baking sheet and optionally rub with oil. Bake at 350F for about an hour until set firmly and crisped up.
