Black Bean Corn Dip

This makes for a nice, healthy snack. I like eating it with tortilla chips, but it would probably be great on salad. OOO, I will have to try that!

This is a mild version so the kids would try it. Next time I will try adding some cumin or cayenne. Or probably jalepeno peppers.

Black Bean Corn Dip

1 can black beans, drained and rinsed
1 cup corn
1 14 oz. can jalapeno diced tomatoes (or dice up some tomatoes and jalapenos)
1 8 oz. can tomato sauce
Juice of 1 lime
4 garlic cloves, chopped
Bunch of green onion or a yellow onion, chopped small
1/3 cup packed cilantro

Mix 1st 7 ingredients together.

Add cilantro.

Toss and chill for at least a few hours to allow flavors to meld.
